Peach Cobbler

Peach Cobbler with a Cup of Coffee   

     Recipe: Bring a large kettle of water to a rapid boil and add 7 or 8 ripe peaches.  Boil for about two minutes and then, turn off heat and let peaches set in water for a few minutes.  Drain water off peaches and let cool until able to handle.  Peel off peach skins and remove pits.  Slice peaches and place them in a bowl.
    In a bowl, mix together 1 T. spoon of cornstarch, 1/2 cup of sugar, 1 tsp. almond extract, 1/2 tsp. nutmeg.
     Prepare Batter: In a mixing bowl, cream together 1/4 cup of margarine with 1/4 cup sugar and 1/2 tsp. Cinnamon until light and fluffy.  Add 1 cup flour, 1-1/2 tsp. baking powder, 1 cup milk and mix until smooth.
     Coat bottom of  a glass baking dish with shortening or cooking oil.  Pour batter into greased baking dish and spread evenly over bottom.  Spoon peach mixture evenly over top of batter.
     Preheat oven to 350F degrees and bake peach cobbler for one hour or until golden brown.  Remove from oven and let cool.  Serve topped with a dollop of vanilla ice cream.
