Peach Cobbler with a Cup of Coffee Recipe: Bring a large kettle of water to a rapid boil and add 7 or 8 ripe peaches. Boil for about two minutes and then, turn off heat and let peaches set in water for a few minutes. Drain water off peaches and let cool until able to handle. Peel off peach skins and remove pits. Slice peaches and place them in a bowl. In a bowl, mix together 1 T. spoon of cornstarch, 1/2 cup of sugar, 1 tsp. almond extract, 1/2 tsp. nutmeg. Prepare Batter: In a mixing bowl, cream together 1/4 cup of margarine with 1/4 cup sugar and 1/2 tsp. Cinnamon until light and fluffy. Add 1 cup flour, 1-1/2 tsp. baking powder, 1 cup milk and mix until smooth. Coat bottom of a glass baking dish with shortening or cooking oil.
